Tapioca starch (or flour) is a versatile, gluten-free thickener and baking ingredient derived from cassava root, ideal for creating chewy textures, glossy sauces, and crispy coatings.
HOW TO USE:
Thickening Soups, Sauces, and Gravies: As a substitute for cornstarch, use 2 tablespoons of tapioca starch for every 1 tablespoon of cornstarch required.
Important: Always create a slurry by mixing the starch with cool water first to prevent clumping, then stir into hot liquids. It is excellent for fruit pie fillings because it sets clear and is not broken down by acidic ingredients.
Gluten-Free Baking: Use in gluten-free blends to add moisture, structure, and a chewy texture to cakes, cookies, and breads.
Breading and Frying: Coat meats or vegetables in tapioca starch before frying to achieve a very light, crispy, and golden-brown texture.
Homemade Boba/Tapioca Pearls: Combine starch with sugar and boiling water to create the chewy balls for bubble tea.
